Foodie Friday — Chicken Mango Wrap


I don't know about you, but when the summer heat arrives I do whatever I can to avoid turning on the oven in the house. With the humidity in Florida, our air conditioner stays on 24/7 this time of year, because there's nothing worse than climbing into a bed with damp sheets. Several years ago I bought a large electric roaster and I use it in the garage, yes, the garage! Does this practice make me white trash or one smart cookie? You decide.

Anyway, last week when the thermometer was reaching 100 degrees F and the heat index was putting air temps at 110, I pulled out my trusty roaster and baked a couple of chickens. Cooled, they went into the fridge cut up, sliced and diced and I didn't have to cook for days. For lunch everyday I made my favorite wrap — Chicken Mango. Here's what I use for mine:

Sliced chicken breast
Chachie's Mango Peach Salsa
Sliced Romaine lettuce
Avocado slices
Sundried Tomato Flatout Wraps

Directions: Layer everything in the wrap and roll it up. What could be easier? I served mine with watermelon slices. Yes, we're still eating the watermelons that Sis found for $1.00 a piece from a roadside vendor.



I am a product person and if I find something new and interesting at the market, chances are it will end up in my basket. Several years ago I discovered Chachie's Salsas and their Mango Peach is my favorite. I also love their Roasted Garlic and Key Lime salsas, but our fridge is NEVER without the Mango Peach. We use it on grilled salmon, in salads, on black beans, shrimp; you name it, we try this salsa on it. Chachie's is available in most states, to see if they have it in your area check their website. PLUS, Chachies comes from Oceanside, California and Shellbelle loves supporting beachy businesses!

My favorite wraps are the ones recommended by the Best Life Diet — Flatout. Each one has only 90 calories and 2.5 grams of fat. There are only 8 net carbs and they contain 9 grams of fiber. They have no trans fat and less than 1 gram of sugar. The best part? They are sooooo…good! Find a store near you at their website.

Another delicious way to serve this meal is to forget the wraps, chop everything else into bite-size pieces and gently mix. Put everything into a pretty bowl and surround it with additional Romaine leaves. Add a spoon to the bowl, pour a glass of sweet tea or lemonade and head to the porch. Watch the ocean waves, the birds or the sunset and enjoy yourself! (Spoon mixture onto a lettuce leaf and munch away.)

Last week you met Fannie Flamingo in my post. Today you can see Suzy the Fish in my product photo. I bought Suzy at the World Famous Ron Jon Surf Shop about two years ago while vacationing in Cocoa Beach, Florida with my California friend Marice. {Hi Marice, I know your reading this.} I don't use her as a vase, because she's so cute on her own. She sits on the windowsill in my kitchen under a big teardrop shaped crystal that splashes rainbows all over my kitchen at the right time of year. The crystal hangs on fishing line and it looks like a lure that Suzy is getting ready to snap up.

Last week Barbara, of The Book Blog, asked if the Wickle's Pickles I use in my potato salad is available north of the Mason Dixon Line and the answer is yes. Wickle's is a family-owned business out of Alabama and they distribute their products nationwide. According to their website you can find them in speciality and gourmet food stores and finer supermarkets. I just buy mine at the local Publix. Check out their website for other pickled products to try. In addition to the relish, I keep their banana pepper rings and hoagie relish on hand.

This sounds yummy! The heat is why we have yet to visit Florida in the summer. So far was have visited our son in the more comfortable months.

You are absolutely right! Florida is not where you want to come in the summer — come here when your ready to escape the cold of winter, or you want to leave the chill of autumn and bathe in sun. Summer? Do what I do most of the time — stay home! lol

If you live in an area that has Trader Joe's try theirs, it's also very good. (Not as good as Chachie's though!)

What a great sounding wrap! Love the flavor combination. I am a fan of mango salsa too. I'll have to look for that brand. Beautiful presentation of your food too! The watermellon really sets it off. Yum yum! Mangos are my favorite fruit of all time and something I indulge myself in several times a week. I'm not a wrap person, but am definitely going to follow your suggestion to use those ingredients in a big salad one night this week.

Oh, dear...since I live in West Texas, a million miles away from any serious body of water, I can't talk BEACH with ya. So sorry but I don't know a freakin' thing about them.
Another thing they made a lot during the depression...water gravy. Not much milk to be had so when they got flour and salt and a little grease of some kind, they made gravy with water instead of milk. Not too many years ago, I just wanted to try it...not too bad..especially with salt...xo bj

Hi Rhonda! Well, I say you're one smart cookie for roasting in your garage! Living on the Gulf Coast of Texas, I know heat too. Cooking just heats up the kitchen so much! I'd never thought of doing what you do. Cook one and eat lots! The wrap recipe sounds wonderful.

Umm.. great looking recipe, too. I'm going to have to look for that mango salsa -- it looks fantastic. Now, if only I could find watermelons for a buck apiece!

Oh Rhonda honey that makes you one smart cookie. I have a gas oven and it heats my house up quicker than anything. I live in Phoenix and where it is already hot, I look for any hints I can. I love the roar of the Pacific and the gentle waves of the Gulf of Mexico in Florida.
